Cranberry Scones

My daughter and I tried our hand at scones today. There's a first time for everything! They turned out really well! This recipe comes from Southern Living Magazine.


Sparkly Cranberry Scones
2 cups all-purpose flour
1/2 cup granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup fresh or frozen cranberries (thawed if frozen)
1/2 cup butter, melted
1/2 cup milk
2 large eggs
1 Tbsp. milk
2 Tbsp. sparkling sugar
-Preheat oven to 400 degrees.
-Stir together first four ingredients in a large bowl; stir in cranberries.
-Whisk together butter, 1/2 cup milk and 1 egg; add to flour mixture, stirring just until dry ingredients are moistened and dough forms. Drop dough by 1/3 cupfuls onto a lightly greased baking sheet. Whisk together remaining 1 egg and 1 tbsp milk. Brush tops of dough with egg mixture, and sprinkle with sparkling sugar.
-Bake in preheated oven for 20 minutes or until golden brown.

Notes:
-We didn't use sparkling sugar because we didn't have any. Granulated sugar worked just fine as far as taste goes, but the scones weren't so sparkly...which was sad, because we like sparkle.
-We're thinking next time we might add some orange zest to the dough or throw an orange glaze on top. White chocolate chips probably wouldn't hurt either.
